Returns the selling asset as an SDK Asset object.
This converts the Horizon response Asset (which contains assetType, assetCode, and assetIssuer) into a proper SDK Asset type (AssetTypeNative, AssetTypeCreditAlphaNum4, or AssetTypeCreditAlphaNum12).
